3 or 4 qt. straight sided sauté pan; large mixing bowl

Ingredients

1/2 tsp. Kosher salt.

1 Tbsp. Peanut oil.

2 1/2 oz. Green onions, whites and light greens, chopped. Reserve tops for garnish.

3 tsp. Garlic, minced fine.

3 tsp. Ginger, minced fine.

1 lb. Cooked rotisserie chicken.

1 oz. Shelled peanuts, chopped roughly.

For the Sauce:

6 Tbsp. Soy sauce.

2 Tbsp. Chili garlic sauce.

7 Tbsp. Sweet chili sauce.

2 Tbsp. Thai peanut sauce.

1 tsp. Garlic, grated fine.

1 tsp. ginger, grated fine.

Make It

  1. In a large sauté pan, over medium heat, combine the salt, oil and green onions and sweat until onions are translucent, about 4-5 minutes.

  2. Add garlic and ginger, and stir until fragrant, taking care not to burn, and additional 2-3 minutes.

  3. Add chicken and cook to warm through, 4-5 minutes.

  4. Make the sauce: In a large mixing bowl, combine soy sauce, garlic sauce, sweet chili sauce, peanut sauce, garlic, and ginger. whisk to combine.

  5. When chicken is warmed through, add 3/4 of the sauce and stir into the chicken mixture, reserving the rest for service.

  6. Serve over rice noodles, and garnish with the remaining sauce, green onion tops, and peanuts.

  7. Accept praise from your very satisfied guests.
