3 or 4 qt. straight sided sauté pan; large mixing bowl

Ingredients

1 Tbsp. Peanut oil.

4oz. Yellow onion, chopped.

1 lb. Ground beef.

3 tsp. Garlic, minced fine.

2 tsp. Smoked paprika.

1 tsp. Italian seasoning, or equal parts dried oregano, basil, and majorum.

1 tsp. Kosher salt.

1/4 tsp. Fresh ground black pepper.

1 14oz. can of diced tomatoes, undrained.

1 8oz can of tomato sauce.

8 floz. Beef or Chicken broth.

8oz. Dry pasta, elbow macaroni or other small tube shape.

2 Tbsp. grated Parmesan cheese.

Make It

  1. In a large sauté pan, over medium-high heat, combine the oil, beef and onions, stirring and breaking apart the beef until no longer pink, about 5-6 minutes.

  2. Add garlic, spices, salt, and pepper and stir until fragrant, taking care not to burn, an additional 2 minutes.

  3. Stir in tomatoes and their juices, tomato sauce and broth. Bring to a boil.

  4. Reduce heat to medium-low. Add pasta and cook, uncovered, stirring occasionally, until tender, 6 to 9 minutes.

  5. Remove from heat, cover, and let stand for 5 minutes before serving.

  6. Serve with Parmesan and sour cream, if desired.
