4-quart or larger Dutch Oven.
Ingredients
3-4 lbs. Beef roast, such as chuck, short ribs, etc.
10g neutral oil, such as peanut oil.
15g Kosher salt.
20g Better than Boullion Roasted Beef soup Base.
450g water.
Make It
Prepare meat the night before: apply salt evenly to surface and refrigerate, uncovered, for 8 hours or overnight.
Preheat oven to 325°. In a large Dutch oven, over high heat, add oil and sear the roast on all sides.
Add water and soup base, until the liquid covers 75% of the meat, and bring to boil.
Remove from heat and partially cover with lid. Place in oven for 5-7 hours.
Remove from oven and let meat rest for 25-30 min. Shred the meat, adding cooking liquid as desired.
