Special Equipment

4-quart or larger Dutch Oven.

Ingredients

  • 3-4 lbs. Beef roast, such as chuck, short ribs, etc.

  • 10g neutral oil, such as peanut oil.

  • 15g Kosher salt.

  • 20g Better than Boullion Roasted Beef soup Base.

  • 450g water.

Make It

  1. Prepare meat the night before: apply salt evenly to surface and refrigerate, uncovered, for 8 hours or overnight.

  2. Preheat oven to 325°. In a large Dutch oven, over high heat, add oil and sear the roast on all sides.

  3. Add water and soup base, until the liquid covers 75% of the meat, and bring to boil.

  4. Remove from heat and partially cover with lid. Place in oven for 5-7 hours.

  5. Remove from oven and let meat rest for 25-30 min. Shred the meat, adding cooking liquid as desired.
