Ingredients
3 Tbsp. Butter, divided.
1 lb. Boneless, skinless chicken breasts, cut into 1/2” pieces.
1/2 C. Yellow onion, finely diced.
1/4 tsp. Kosher salt.
1/8 tsp. Black pepper.
3/4 tsp. Italian seasoning (equal parts dried marjoram, basil, oregano).
2 tsp. Garlic, minced fine.
1 C. Long grain white rice, uncooked.
1 (10oz.) can. Cream of Chicken soup.
2-3/4 C. Chicken stock.
2 C. Broccoli florets, cut into 1/2” pieces.
1-1/2 C. Cheddar cheese, shredded.
1/2 C. Mozzarella cheese, shredded.
2 Tbsp. Parmegianno Regianno Cheese, grated.
1/2 C. Ritz crackers, coarsely crushed.
2 Tbsp. Fresh parsley, chopped.
Make It
Preheat the oven to 400 degrees F. Melt 1 tablespoon of butter in a large oven safe pan over medium heat.
Add the chicken and cook for 4-5 minutes, stirring occasionally, until chicken is browned.
Add the onion and cook for another 3-4 minutes or until softened.
Stir in the garlic and cook for 30 seconds. Add the salt, pepper and Italian seasoning.
Next, add the rice, cream of chicken soup and chicken broth. Bring the mixture to a simmer.
Cover the pan and cook for 12 minutes. Uncover the pan and stir in the broccoli. Cover the pan. Bring the mixture back to a simmer and cook for another 3-5 minutes or until rice is tender.
Uncover the pan and stir in half the cheddar cheese, and all of the parmesan and mozzarella cheeses. Transfer to casserole dish.
Melt the remaining 2 tablespoons of butter in a medium bowl. Add the crackers to the bowl and stir to combine.
Sprinkle the remaining cheddar cheese over the top, then add the crackers over the cheese.
Place in the oven and bake uncovered for 10 minutes or until cheese is melted and crackers are golden brown.
Sprinkle with parsley, then serve.
