Ingredients

  • 1 Cup (225g) Long-grain rice, such as Jasmine or Basmati.

  • 1 Cup (225ml) Chicken stock or broth.

  • 1/2 tsp. Turmeric.

  • ½ tsp. Ground coriander.

  • 1 Tbsp. Olive Oil

Make It

  1. Rinse rice under cold water by gently scrubbing the rice with your fingertips in a circling motion. Pour out the milky water, and continue to rinse until water is clear. Be sure to drain really well.

  2. Add 1 cup (225g) rice and 1 cup (225ml) chicken stock, and spices in Instant Pot Pressure Cooker and combine well to integrate all. Close the lid, turn Venting Knob to Sealing Position. Pressure Cook at High Pressure for 3 minutes, then Natural Release until remaining pressure is released, about 15-20 minutes. Open the lid quickly.

  3. Fluff with a fork. Stir in olive oil to lightly coat. Serve warm.
